He’s got both a video and an article explaining how to make em. Aand he’s a plagiarist. Here’s the recipe I’m currently using (still based on what I learned from that video). 140g milk 8g dry yeast 40g sugar 400g flour 3 eggs 40g butter Heat some of the milk (60g) and a small amount of flour (30g) in a pot while constantly whisking until it thickens into a paste. Activate the yeast using the rest of the milk. Combine all ingredients except butter, knead by hand or machine until homogeneous. Finally incorporate butter into dough. Allow to rise for 30 minutes, then punch air out of the dough. Divide into eight buns, rise for 2-3 hours. (Less for denser buns, more for airier ones.) Brush buns with eggwash before oven. Convection oven at 160 degrees for 18 minutes. Melt a sliver of butter over each bun immediately out of the oven.
