“Everyone who works in aviation wants to fuck these things” these things = the planes, “wants to fuck” = is overly emotionally attached to the plane. “every plane that crashes is a wife who dies” = the technicians will dearly mourn the “death” of the plane, and don’t want it to happen in the first place.
Less likely to die on a bus than a plane. Less likely to be injured on a plane than a bus.

My father used to be an airline pilot and I know airline pilots can be a bit obsessive but it’s not about the plane as much as it’s about all the procedures and regulations. They mostly swear at the planes. Cabin crew mostly see it as just a job, with some bonuses that you don’t normally get. Crew don’t get assigned to a particular plane, they move around quite a lot, so they don’t really get attached to one aircraft in the way that sailors may get attached to their ship.
I think they’re talking about the mechanics, viewing “those things” (the planes) as wives, the mechanics’ autistic (<-complimentary) love transcending material and size, to reach around to lust.
